IDENTITY DOCUMENT
Wine made from Palomino Fino from the renown farm Pago Macharnudo Alto, with vines that are over 25 years
old. The free-run must (mosto yema) ferments in 500-litre American oak butts. Once it is selected, it is fortified
at 18% vol., going through a first ageing under the yeast cap (velo en flor), in "criaderas" and "soleras". The last
"criadera" is sprayed with selected wines from the first layers (escalas) of Fino Inocente and Amontillado Tío Diego
to continue with a long oxidative ageing of more than 20 years.
Tasting Note :
Light mahogany colour. Intense nutty aromas (hazelnuts, walnuts), Vibrant spicy tones, very delicate and dry, round
mineral palate with elegant smoky hints.
